How Do I Mount Pickups Without The Mounting Ring?

I have a guitar I'm refinishing and I want to take off the mounting ring and just go with the pickup by itself when I'm done.

How do I mount the pickups without the mounting ring? Do I just screw the pickup into the wood? Is there a way to adjust the pickup height without the mounting ring?
