The VDC rating is the voltage that you can safely apply to the pot without the voltage arcing inside the pot.They are giving the value in DC volts. The output of the pickups is in Millivolts AC. The wattage rating is how much power the pot can dissipate before it releases its magic smoke. The voltage rating is the arc threshold, but you'll never see either in a guitar circuit.
