Sunburst Finish By Hand

Applying a finish is one of my weakest skills when building my guitar's. If I had a proper spray booth I believe I could do much better. I have tried applying dye by hand and have had mixed results so when I saw this video I thought that it might be of interest to others here. Sometimes seeing the process can help to explain things better, at least thats how it works for me. Something like this may have been posted before but I thought that it was an interesting video so here it is;

I have a question, does he finish with the shellac (he mentiones the politure)? Is it possible to just grain-fill it with 1-2 coats of shellac and then spray some clear coats over? Doesn't shellac dissolve over time (due to sweat and such things)?
