Actually French Polish is a good option. I believe people feel it is a thinner, lighter finish. Myka just finished up his acoustic in the acoustic build thread, and used tru oil. Maybe he could give you his opinion on it's viability. I personally use Shellac or very light laquer. I don't have as strong an opinion on the negative effects slightly thicker finishes. It is not a very easy thing to quantify, and much like other guitar related subjects. I believe the actual differences are pretty grey.
