Maybe this would be better put in the electronics section, as visitors there can give you exact differences, but I will give you the basic answer.

A-taper or Audio taper has a range that is tuned to a human ear, so the volume increase between 2-3 would be proportionate to the difference between 7-8. J-taper (I think you mean L-taper) or Linear taper, the resistance would be the same between 2-3 as it would be between 7-8, but the sound or the volume would jump instead of being a steady increase. Sorry if this is not crystal clear, I'm sure someone can jump in and explain it better.
