The first thought that comes to mind is the Ripley stereo guitar that was out in the late 80's. You could pan each string separately. You could probably do that with these pickups. This is a really cool concept here with the ability to move each pole up and down the guitar body. I'm not sure how practical it is. I wonder if they have some sound samples of it on that page.
