Aluminum, brass or anything nonferrous should be fine but still may have some effect (good of bad depending on your taste in tone) on the sound. Last time I checked most covers were made out of metal But they don't cover the magnet polepieces; I believe that's what asm meant by (where the magnets aren't visible). Even adding a metal cover that has holes to let the polepieces through will slightly affect the sound whether it's ferrous or not, but ferrous metal is worse. There are exceptions of pickups having metal covers with no holes for the polepieces but they are designed to be used with them. Here, we're talking about adding a cover to an existing pickup without affecting its sound, or at least that's how I understood the original question.
