man that Pacer guitar looks cool, cheap and good for modding. why didnt you just glue a new piece of wood on the headstock and cut a nice attractive headstock?

Well i dont know what pickups AC/DC and Pearl Jam use but you can get alot of sounds out of a JB and 59/Jazz combination, or any pickup combination for that matter. Id say just try a pickup combination you want and what sounds good to you.

if you're going to build it you could use a cars accelerator pedal.
